Laska & Tofu Soup

Makes 4 portions

1 tsp olive oil
2 shallots, finely chopped
1 tbsp laksa paste
1 can of coconut milk
1 courgette, cubed
280g tofu, sliced
200ml veg stock
1/2 lime juiced
50g rice noodles
Nigella seeds
Chilli flakes
Coriander

Salt & Pepper

1. Cook your rice noodles as per the instructions on the back of the packet.

2. With a little bit on olive oil, on a medium - high heat, saute off your shallots for 7-8 minutes. Once soft, add in your laksa paste and stir for a couple of minutes.

3. Add in your courgettes, then your coconut milk and then vegetable stock. Simmer this all together for 10 minutes.

4. Add in your tofu and season with salt, pepper and lime. Adjust to taste.

5. Place your noodles into a bowl, then put your soup over and top with nigella seeds, chilli flakes and coriander.
