Serves 6

3 tbsp olive oil

3 aubergines

1 tbsp sweet smoked paprika

1 tsp ground cumin

1 tsp harissa paste

1 tbsp maldon smoked salt

1 tbsp toasted sesame seeds

15g coriander, roughly chopped

Tahini dressing:

3 tbsp tahini

4 tbsp olive oil

1/2 tsp ground cumin

1. Preheat the grill to high. Trim the aubergines, then. cut into long, thin slices, each about 1cm thick. Arrange them on a large flat baking sheet.

2. Measure the paprika, cumin, harissa and olive oil into a bowl and mix well. 

3. Brush the spiced oil over the aubergines and season with the maldon smoked salt. Place the aubergine slices under the grill for about 8 minutes, then turn and grill the other side for about 8 minutes.

4. Meanwhile, mix all the dressing ingredients together in a small bowl. 

5. Place the grilled aubergine onto a serving platter, drizzle over the tahini dressing, sprinkle over the sesame seeds and top with the coriander.

6. It can be served warm or cold.
