Teriyaki & Chaga Mushroom Bao Buns

Makes 6 buns

350g oyster mushrooms, roughly chopped

2 tbsp sesame oil

2 garlic cloves, crushed

2 tbsp ginger, grated

50ml teriyaki

1 tbsp chaga powder

2 tbsp (GF) soy sauce

3 tbsp honey

2 limes, juiced

6 bao buns 

1/2 cucumber, peeled into thin slices

15g coriander, roughly chopped

2 spring onions, finely sliced

2 tbsp toasted sesame seeds

1. Place a frying pan over a medium high heat with a drizzle of sesame oil. Once hot add the garlic & ginger, stirring continuously for a minute before adding the soy, teriyaki, honey and lime juice.

2. Let it bubble over a medium heat for five minutes. Add in the mushrooms and stir so everything is coated. Add in the chaga powder and continue to cook for a couple of minutes and the sauce thickens up.

3. Microwave the bao buns as per the instructions and serve up.

4. Stuff the buns with the mushrooms, cucumber, spring onions, sesame seeds & coriander.
