Peach, Feta & Mint Salad

4 peaches, pitted and each cut into wedges

1 red onion, thinly sliced into half moons

Extra virgin olive oil

1 tbsp chilli flakes

Juice of 1/2 lemon

200g feta cheese, crumbled into small pieces

30g fresh mint, leaves stripped, rolled up tightly and sliced into ribbons

Salt and pepper to taste

Serves 4-6 people 

1. Put the peach slices, onion and a good drizzle of olive oil, chilli flakes and lemon juice into a mixing bowl, season generously with salt and pepper and mix well.

2. Transfer the mixture to a serving dish, then scatter over the feta and mint and serve.

Allergens: Dairy.
