Quinoa Seeded Bread



350g quinoa
120g chia seeds
240ml water

60ml extra virgin olive oil
1 tsp bicarbonate of soda
1 tsp honey or maple syrup
3 tbsp of fresh lemon juice
Generous pinch of salt
70g mixed seeds, for sprinkling

Makes 1 Loaf

1.You will need to soak the quinoa and chia seeds the night before you plan to make the bread. Place the quinoa & chia seeds in separate bowls, then pour 240ml of water over the chia seeds and enough water to cover the quinoa as well. Place both bowls overnight in the fridge.

2. When you are ready to bake preheat the oven to 160 degrees C, then grease the loaf tin with olive oil and line with baking paper. Drain the quinoa, then place half the quinoa in a blender with the chia seeds, bicarbonate of soda, honey or maple syrup, olive oil and lemon juice. Blend until the mixture is almost smooth, then stir in the other half of the quinoa.

3. Pour the mixture into the prepared loaf tin and scatter the mixed seeds over the top. Place in the oven and bake for 70 minutes.
