Fig & Walnut Soda Bread

1 loaf


200g buckwheat flour
200g spelt flour
50g oats
1 tsp bicarbonate of soda
1 tsp salt
500g natural yoghurt
150g dried figs, roughly chopped
80g walnuts, roughly chopped

1. Preheat the oven to 200 degrees C. Line a baking tray with baking paper.

2. In a large bowl add your flours, oats, bicarbonate of soda and salt and mix together using a whisk.

3. Chop up the walnuts and figs. Add in the walnuts to your mixture. Add the figs to a separate bowl with some flour to make sure they don’t stick, then add them to the mix.

4. Add in the yoghurt, use a spatula to start mixing it all together but then get your hands involved.

5. Flour your hands and a surface and place your dough onto the surface and shape it into a loaf shape.

6. Place it onto the baking paper, make a large cross using a blunt knife or spatula.

7. Place in the oven for 35/40 minutes. The loaf should be hollow when you tap it. Leave to cool for 5 minutes before enjoying.
