Spicy Carrots topped with Feta & Coriander

Serves 4-6 as a side


1kg of carrots

2 tbsp harissa

1 tbsp olive oil

1 tbsp honey

100g feta, crumbled

30g coriander, finely chopped

Salt & pepper 

1.Heat your oven to 200 degrees C.

2. Peel all the carrots & chop them in half and then in 1/4's depending on the size of each carrot. Mix them with olive oil, salt & pepper and place them in the oven for 20 minutes. Whilst they are in the oven make your spicy paste.

3. Mix together the harissa, honey and olive oil. After 20 minutes take the carrots out of the oven and mix the paste with the carrots and cover them well. Place them back in the oven for another 10-15 minutes.

4. Place on a nice platter, top them with the crumbled feta and then sprinkle over the chopped coriander.
